History Of Tea: Origin & Evolution

Different cultures across the world have built their own tea journeys. However, Lu Yu, because of his book Tea Classic, is considered the ‘Father of Tea’ in Chinese history. Tea was first discovered by Emperor Shen Nung in ancient China almost 5,000 years ago (2737 BC).

According to the story, a few leaves from a wild tree wafted into his pot of boiling water while he was outdoors. The unexpected change in color and aroma caught his attention, and he decided to try it. He sipped the intriguing brew and was instantly enchanted by its delicate flavor and refreshing effect. He described it as a warm feeling traveling through his body. The delicacy was named ch’a by Shen Nung.

The brew, known as “tea,” traveled to India thanks to the British, who spread this tradition throughout the country. The British discovered that Indian soil was suitable for cultivating tea plants and subsequently tried to overthrow China’s monopoly.

Different Types of Tea and Their Characteristics

The region and climate where tea is grown, the time of picking, and the processing techniques all contribute to its quality and unique flavor profiles.

  • Green Tea

Green tea leaves are the least processed of all teas as they do not go through oxidation. After being picked, the leaves are left to wither for a few hours before being steamed or pan-fried to remove moisture, trapping antioxidants within the leaves. Green tea flavors vary by region: teas with a grassy flavor come from Japan, those with peach and chocolate notes originate in China, and gunpowder-flavored teas hail from Taiwan.

  • Black Tea

Black tea is made by exposing tea leaves to hot air for several hours after picking. The leaves are then rolled to release essential oils, allowing them to permeate the buds. Afterward, they are sieved—smaller leaves move to the next stage, while larger ones are rolled again—and dried in an oven to stop oxidation. The result is a full-bodied tea beloved by enthusiasts worldwide.

  • White Tea

Once reserved for royalty, white tea is the rarest of all teas. It is hand-picked early in the season with fine silver buds still attached. This smooth, complex tea originates from China’s Fujian province, Darjeeling in India, and parts of Sri Lanka. White tea promotes healthy teeth and gums, increases bone density, and may protect against rheumatoid arthritis.

  • Oolong Tea

Oolong tea comes from the Camellia sinensis plant and is semi-oxidized, sitting between green and black tea in terms of processing. Expertise is required to extract its perfect flavor and achieve the desired oxidation level, which ranges from 20% to 80%. Oolong flavors vary from soft floral notes to nutty and toasty undertones, depending on the level of oxidation.   • Rooibos Tea

Rooibos, meaning “red bush,” comes from the Fabaceae family and grows in South Africa’s fynbos.
